The Small Pitcher That Makes Gongfu Tea Make Sense"},"content":{"rendered":"<p class=\"wp-block-paragraph\">A gaiwan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A cup.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Hot water.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Technically, that is already enough to make gongfu tea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So when beginners first see a full Chinese tea table, one object often seems particularly unnecessary: the little pitcher sitting between the gaiwan and the cups.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Why pour the tea into another vessel when it could go straight into the cup?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then you use one.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And suddenly a lot of the tea table makes more sense.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That small pitcher is called a <strong>gong dao bei (\u516c\u9053\u676f)<\/strong>, often translated as a <strong>fairness cup<\/strong>, <strong>fair cup<\/strong>, or simply <strong>tea pitcher<\/strong>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Its job is simple: <strong>it collects the entire infusion before the tea is served.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That one extra step solves several surprisingly practical problems.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Why \u201cfairness cup\u201d?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Imagine brewing tea for three people.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You pour directly from the gaiwan into the first cup.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then the second.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then the third.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The first cup receives tea from the beginning of the pour. The last cup receives tea that has remained in contact with the leaves slightly longer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">With a fast pour, the difference may be small. large should a gong dao bei be?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Slightly larger than one full infusion from your brewing vessel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That is the simple answer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If you use a 100ml gaiwan, you do not need a 500ml fairness pitcher.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A pitcher around 150\u2013250ml is usually more than enough for many solo and small-group gongfu setups.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The extra space matters because you do not want the pitcher filled completely to the rim.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It should be easy to receive the infusion without splashing and easy to pick up afterward.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If you sometimes make two quick consecutive infusions and combine them before serving several guests, a little extra capacity becomes useful.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But bigger is not automatically better.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">An oversized pitcher can feel clumsy beside small gongfu teaware.<\/p>\n\n\n\n<figure class=\"wp-block-paragraph\">With large intact leaves and a well-controlled gaiwan pour, very little leaf may escape.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And even when small fragments enter the pitcher, they often settle at the bottom while you drink.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Some tea drinkers actually prefer the slightly fuller texture of unfiltered tea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">So the usual setup:<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>gaiwan \u2192 strainer \u2192 gong dao bei \u2192 cups<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">is useful.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It is not a rule.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Do you need one when drinking alone?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Sometimes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Not always.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This is where the answer becomes personal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">If you drink from a cup that easily holds one entire gaiwan infusion, direct pouring is beautifully simple.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">One gaiwan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">One cup.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Almost nothing to clean.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But a gong dao bei still has advantages even for one person.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It lets you drain the leaves completely.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It separates brewing speed from drinking speed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It gives you a clear view of the liquor if you use glass.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">And if your drinking cup is smaller than the gaiwan, the remaining tea has somewhere to wait without continuing to steep.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That last point becomes important with very small Chinese teacups.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A 100ml gaiwan may produce enough tea for two or three servings in a 30ml cup.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Without a pitcher, the rest has to remain somewhere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Leaving it with the leaves is usually the least useful option.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">It becomes even more useful with a small teapot<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">The same logic applies to Yixing and other gongfu teapots.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A 100ml pot may be pouring into three 30ml cups.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">You could move from cup to cup during the pour.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Many people do.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">But a gong dao bei makes distribution simpler and more consistent.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It also gives you a chance to look at the liquor, which can be especially useful when the brewing pot itself is opaque.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">This is why the fairness pitcher belongs naturally with both gaiwans and teapots.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It is not connected to one specific brewing vessel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It is connected to the problem of <strong>serving an infusion after it has Chinese teaware.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">From the outside, gongfu tea can look like a collection of ritual objects.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Every piece seems to have a special name.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Every movement seems deliberate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">That can make a beginner assume that the equipment exists mainly because tradition says it should.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then you actually use it.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The fairness pitcher solves uneven cups.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The tea tray catches water.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The gaiwan gives direct control over the leaves.<\/p>\n\n\n\n<p
