What do you need for gongfu tea?

Gongfu brewing uses a relatively small brewing vessel and repeated infusions. You can begin with a gaiwan or teapot and cups; you do not need every accessory to enjoy it.

  • Gaiwan or teapot: your brewing vessel. Choose the capacity for the number of people you usually serve.
  • Tea cups: small cups for tasting each infusion.
  • Gongdao bei, or fairness pitcher: receives the brewed tea before you divide it between cups, helping each person get the same infusion.
  • Tea filter: catches loose leaf fragments when pouring into the pitcher.
  • Tea tray or tea boat: catches spills and gives your brewing vessel a place to sit. It is useful, but optional.
  • Other accessories: a tea scoop, basin or mat can make your setup more convenient. Check the packing list rather than assuming they come with every set.

Do I need both a gaiwan and a teapot?

No. Either can be your main brewing vessel. Choose the one you enjoy handling, then add other pieces if they suit your routine.

Does every Chinese tea set include a tray?

No. Set contents vary. If a tray matters to you, check the product’s packing list and the available style options before ordering.

How many cups should I choose?

Think about the number of people you normally serve, and compare that with the brewing vessel’s capacity. A large cup count does not tell you how much tea the teapot holds.
